TOMATO RASAM:

The ingredients used in this recipe are rich in fibre and it is rich in antioxidants. This recipe is good for convalescing patients and is also good for pregnant women. It is rich in vitamin A and C . It keeps our body healthy and contains a wealth of minerals. It is also beneficial to lose weight. Regular consumption of rasam may help keep cancer away. This recipe also encourages digestion.

INGREDIENTS:

•3 tomatoes •a pinch of turmeric •one tsp ready made rasam powder •one tsp salt and one tsp lemon juice •half tsp chopped garlic •one tsp jaggery •one fourth tsp crushed black pepper • tamarind paste 1 tbsp

INGREDIENTS FOR TEMPERING:

• 1 tablespoon oil, a few curry leaves, 1 teaspoon mustard seeds, half teaspoon cumin seeds and a pinch of asafoetida (hing)

METHOD: •Boil chopped tomatoes and add two and a half cup of water, rasam powder, turmeric, garlic, salt and jaggery together for 7 minutes in mediumflame. •Let it cool for some time after sometime blend it and make puree. •Strain the puree. •Take oil in a small pan heat it on low flame after that add all ingredients of tempering . •Add the tempering and one fourth tsp crushed pepper to the puree and heat it for two minutes. •Add lemon juice. Serve it

CHICKEN AND VEGETABLE SOUP:

This recipe is rich in nutrients and protein which is beneficial to lose weight,growth and development of various organs in the body. Chicken is low in calories and rich in vitamin B⁶,B⁵B¹² and several minerals like phosphorus and calcium which reduce the risk of heart disease

INGREDIENTS:

one cup diced chicken • one tbsp sherry two tbsp light soya sauce • ten button mushrooms, sliced one litre chicken stock •one tbsp spring onions, finely chopped one cup cabbage and one carrot, chopped •two tsp oil one tbsp Cornflour mixed with a little water to form a paste

METHOD:

Put the chicken, sherry,1 tbsp soya sauce and oil into a bowl. Marinate for 10 minutes. Put the stock, mushrooms, cabbage, spring onions,carrot and remaining soya sauce and mix it in a another bowl. And cover it, after that microwave for 5 or 6 minutes. Microwave the chicken on high, covered, for 2 minutes.Remove it. Add to the stock along with corn flour paste. Cover and again microwave for 3 minutes, stir and stand for a minute before serving.

one cup cracked wheat or oats • half cup tiny florets of cauliflowerone cup finally chopped carrots • finely chopped beans(2-3) two tbsp peas three tbsp ghee or oil half tsp mustard seedstwo tbsp chopped coriander • one-and-a-half tsp salt • one fourth tsp turmeric powderone tsp lemon juice

METHOD:

• heat 1 tablespoon ghee or oil for 1 minute on a pan at medium flame. •now add one cup oats or cracked wheat in the pan to roast the oats. • now take another deep pan and put it on medium flame and add two tbsp of ghee or oil. After heating the oil put half tablespoon of mustard seeds •now add all the vegetables,coriander and half tsp salt in the deep pan and mix it well for 1 min and cover the pan with a lid for 4 minutes. • after 4 minutes ad half tsp turmeric powder and 1 tsp salt and mix well. Now add roasted oats in the deep pan and mix well . •add two cups water in the pan and mix, now cover the pan with lid for 10 min • after 10 minutes add lemon juice to taste

ALMOND DESSERT DELIGHT

So,today we are going to make “ALMOND DESSERT”

●INGREDIENTS:

half cup branched and peeled almondsone fourth cup pure ghee or oil •one fourth cup semolina (suji/rawa) •a few saffron strands •half cup milk •four tablespoons sugar •some dry fruits for garnish

●METHOD:

Crush almonds coarsely. •Heat ghee or oil in a non-stick pan. Add semolina (suji) and sauté for 2-3 minutes. Add half cup water and mix. Add Saffron,milk and sugar and mix it well. Add crushed almonds and mix and cook stirring continuously till it gets thick consistency. •Now garnish this dessert with some dry fruits.
